A Blanc de Blancs Methode Traditionnelle made by Margaret River producer Vasse Felix. Crafted from house-grown Chardonnay, handpicked from a specialty vineyard in Karridale. A pale golden-copper colour in the glass, with a tight mousse of fine bubbles. An intriguing, exotic perfume, with almond, marmite, crushed shell, green apple, lemon zest and biscotti all mingling in a complex set of aromas. Very dry on first sip, with a saline acidity. Richer as you go, when the riper fruit flavours of plum, apricot and pomengranate come through. A softer texture follows that fruit depth, swaddling the finish, but still dry, pithy and tangy. 94pts
