From Waiau in North Canterbury – the vineyard sits on the limestone hills inland from Waipara. Winemaker Dom Maxwell starts the fermentation out in the vineyard itself, then sitting on skins post-ferment for up to a month. The concept aims for a sense of the place to be found in the wine in your glass. A bright, lighter ruby colour in the glass. The perfume has cranberry, plum, red cherry, orange peel, white pepper, dried herbs and lilac florals to it. The palate starts dry, chalky and ethereal, with savoury elements of peat, tapenade and mushroom mixing into the brighter fruit flavours. Elegant, revealing itself slowly and unfurling in the glass. The balance of acidity and firm tannin give structure, allowing the plush fruit to push forward as you go. A persistent finish, with promise of more development to come given time. 93pts
