A ‘vino de pasto’ wine from the Pérez family’s holdings in the well-regarded Macharnudo vineyard, in the Cadiz area. Made from Palomino grapes, the same as used for the famed sherries of the region. You get a little of that saline, fino-like note on the nose, with a clean, green aroma of nettle and bamboo, plus cashew nut, fruit pastille and lemon peel. There’s a little funk in here, with a savoury element of sticky rice, minerally oyster shell and green olive. Great, zesty acidity and really dry in the palate. A sense of oak in the background, and in the creamy, buttery texture that swaddles the back of the palate. Unusual, and quite delicious. 94pts
