Tasted at the Huka Honey Hive in Taupo, this is a local ‘mead’ made from New Zealand manuka honey – the iconic wine of Bemrose Estate. A deep golden colour and quite viscose in the glass. The scent is immediately rich, with a tang of dark manuka honey, apricot, ginger, tar, marmalade, toasted spice and jasmine. An oily texture coats the mouth, with that sweetness coiled through the palate, but not with weight – there is a subtle lightness, and the finish is drier, with a spicy kick.
