Sherry, from Jerez in Spain, of course – and Pedro Ximénez is typically one of the darkest and sweetest styles. This one a winner os so many awards, including the Trophy for Champion Fortified Wine at NZIWS 2020. Thick, unctuous and dark in the glass, with a black, polished mahogany colour. Sensuously aromatic, with caramel, banana, cloves, date, malt, buttered toast, fig and walnut on the nose. Stupendously sweet to taste, with a burnt butter, orange peel, cocoa and christmas cake edge on the palate. A balance and freshness persists, with no dustiness or oily cloying to the enveloping texture. Plush, rich and lingering on the finish. 94pts
