Using Merlot fruit from Carter’s Jomara vineyard, at Onetangi on Waiheke island – a sparkling Rosé with a bright, fairly dark, ruby colour in the glass. A fine bead of bubbles, and a perfume of sweet summer berries, vanilla and honeysuckle. The palate is rich and intense, offering some complex savoury additions to those juicy aromas – liquorice, salami and preserved lemon. A little phenolic grip, spice and some nutty, oatmeal elements also lie in textural layers as you go. The finish is bone dry and salivating. 93pts
