A very pale green-straw in the glass, with energy and focus to the aromatics on the nose. There is lime leaf, dried pear, cherry, pineapple, lemongrass and nectarine and a delicious green edge of nettle and sorrel as well. A layer of oyster shell minerality and savouriness of fennel, white pepper and bay leaf is a great contrast with the nibble of residual sugar, whilst the buoyant, saline acidity gives it all great line.
