This m\u00e9thode traditionnelle wine is a ros\u00e9, made from Pinot Noir grapes, spending 24 months on lees. A coppery salmon pink colour, with aromas of redcurrant, strawberry, lemongrass, apricot and roast chestnut. There\u2019s a fine bead and creamy mousse and a generous weight to the palate. Driven along by a zesty, vibrant acidity, and showing layers of stonefruit flavours of quince, cherry and white peach. A brioche, breadcrumb note, from the yeast autolysis sits in the background and emerges as the wine opens up in the glass.
