Over an interesting couple of hours,\u00a0<b><span lang=\"EN-US\">The Supernatural <\/span><\/b><span lang=\"EN-US\">guru <strong>Gregory Collinge<\/strong>, talks through their wines, including the flagship, eponymous, Sauvignon Blanc<\/span><span lang=\"EN-US\">. We started making this in 2009, and we only made <strong>The Supernatural<\/strong> until 2013 when we started making our first two skin-fermented wines \u2013 <strong>Green Glow<\/strong> and <strong>Spook Light<\/strong>. But it\u2019s still the wine that we make the most of, the wine that puts us on the map.<\/p><p><strong>WineFolio<\/strong>: Is it the wine in Decanter magazine that says you\u2019re the 9th best natural wine in the world?<\/p><p><strong>GC<\/strong>: (laughs) well, no. That\u2019s <strong>Green Glow<\/strong>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-02b8738\" data-id=\"02b8738\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-299f1fd elementor-widget elementor-widget-text-editor\" data-id=\"299f1fd\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>And it\u2019s 9<sup>th<\/sup> Best \u2018Orange wine\u2019 in the world, although the author Simon Woolf of The Morning Claret did specify that it wasn\u2019t a \u2018best of all time\u2018 list, but a list of his recent discoveries. Regardless, we\u2019re pretty chuffed about that obviously because we are so young when it comes to making orange wines.<\/p><p>But the thing about The Supernatural is that we started making this wine because we knew we wanted to make a different style of New Zealand Sauvignon Blanc. And it\u2019s worked really well for us because, as I\u2019m sure you appreciate, it\u2019s a very very different style.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-46a4fff elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"46a4fff\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-2742bfb\" data-id=\"2742bfb\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-e18ae47 elementor-widget elementor-widget-text-editor\" data-id=\"e18ae47\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>WF<\/strong>: I\u2019ve had a few since I\u2019ve been here. Not just yours, but Rod McDonald makes one, and Tim Turvey at Clearview does too \u2013 both neighbours of yours? I\u2019ve also been at Trinity Hill, so good company!<\/p><p><strong>GC<\/strong>: Well, that\u2019s the first thing \u2013 Hawke\u2019s Bay Sauvignon Blanc is a different beast from Marlborough. There\u2019s a lot of Sauvignon Blanc that\u2019s grown in Hawke\u2019s Bay that\u2019s sent down to Marlborough for blending. But I think the style of it in Hawke\u2019s Bay is definitely a warmer style, with warmer tropical fruits. Much less of that gooseberry and lawn clippings. So what we decided to do with the wine was to treat it quite differently. The Supernatural is made with extended lees contact. Depending on the vintage it has a malo, and it has wild yeast fermentation, 6 hours soaking on skins before pressing. Into stainless steel and 12 months on lees. And organically and biodynamically farmed. Quite different.<\/p><p>A lot of Marlborough Sauvignon Blanc is made to what I would describe as \u2018a recipe\u2019 \u2013 a very consistent taste every year. So it\u2019s an expression not just of its site, but of that moment.<\/p><p><strong>GC<\/strong>: The thing about all our wines is that we\u2019re trying to make \u2018terroir\u2019 wines. That\u2019s a bit of a wanky word \u2013 whatever \u2013 but we are really trying to express site and each vintage. So we\u2019ve got 2017 and 2108 in front of us and these two wines were both made in pretty much the same way. 2017 was probably one of the crappiest vintages Hawke\u2019s Bay has ever had. For us, at harvest, we had 450mm of rain in two weeks. So we had to pick the 2017 really early \u2013 much lower brix than we would normally pick \u2013 something like 21 brix. 2018 was definitely better but there was also a lot of rain around that year. We didn\u2019t get the ripeness or the absolute fruit quality that we wanted. And with The Supernatural we always look for and take the best grapes.<\/p><p>2019 a different beast again \u2013 we haven\u2019t bottled that yet, but it was a lot better, and 2020 is going to be amazing. What that means is that, in 2017 it\u2019s 11.5% alcohol \u2013 2018 is up to 13.5% &#8211; much riper fruit. Both made in the same way, but each year we decide whether or not to let it go through malolactic fermentation. Both of 2017 and 2018 did go through malo.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-127e962 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"127e962\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-f731bfd\" data-id=\"f731bfd\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-bf63d5c elementor-widget elementor-widget-text-editor\" data-id=\"bf63d5c\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>WF<\/strong>: Warm and tropical on the nose, Ripe and floral. Generous and well balanced. Still got that passionfruit identifier but it\u2019s not that whack in the face like you get with one from further south. Not astringent, sharp and tart \u2013 sweet and lovely. And I\u2019m still getting that ripe pear flavour.<\/p><p><strong>GC<\/strong>: That\u2019s a style we\u2019ve developed and one of the reasons we decide year by year whether we\u2019ll let it go through malo or not. With malo you soften off that harsh acidity. The 2017 has been in bottle for a year and a half now, and because of the lees work, it benefits from time in bottle. The soaking on skins gives it a slight phenolic content.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-ddd9c11\" data-id=\"ddd9c11\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-ea2ccb2 elementor-widget elementor-widget-text-editor\" data-id=\"ea2ccb2\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>WF<\/strong>: Can\u2019t taste the spiders in it though.<\/p><p><strong>GC<\/strong>: Might be a few fruit flies. It\u2019s unfined and unfiltered. 2018 was still a challenging vintage. In 2017 we split the crop between the Supernatural for the best fruit, and Pacific potion, our second brand. 2018 we made all Supernatural but we definitely had to do a lot of sorting before we could press it. The \u201918 is even warmer and smokey, spicy, even on the nose. . It\u2019s getting back to where we started \u2013 that super warm, tropically, full-bodied style. We think a minimum of 5 years aging potential, possibly longer. We haven\u2019t been around long enough to prove that.<\/p><p><strong>WF<\/strong>: I get hints of Vermouth or dry sherry, or even Muscat in the wine already \u2013 lots of reference points that aren\u2019t your typical. Could you make a late harvest wine here?<\/p><p><strong>GC<\/strong>: That\u2019s a challenging question because the way the weather patterns are working at the moment. Last few years, up to 2020 we\u2019ve been getting that rain at harvest, so if we left grapes on longer they would probably get blasted by the weather. I wonder if we might experiment with that at some point.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-2ae2949 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"2ae2949\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-a40df62\" data-id=\"a40df62\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-9f0a419 elementor-widget elementor-widget-text-editor\" data-id=\"9f0a419\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>WF<\/strong>: I find the wines quite intriguing, but I do have to remember that this is Hawke\u2019s Bay Sauvignon Blanc, grown on a very good site \u2013 your land is not your average site. It could prove itself to be a Grand Cru site, and over time people could point at that and say \u2018look at the site \u2013 look at the wines\u2019. I was talking to Tim Turvey about the handful of rows that he puts into his $175 Endeavour Chardonnay \u2013 and he\u2019ll say \u2018well, that\u2019s my Grand Cru\u201d. So I could see you doing that \u2013 charging a big premium for something that is a wine to put down \u2013 a complex, intriguing, serious wine?<\/p><p><strong>GC<\/strong>: Interesting that you say that. Maybe that\u2019s our next step. Our site, if you look at the Hawke\u2019s Bay Winegrowers \u2018appellations\u2019 \u2013 we\u2019re not in any of those! We\u2019re a site of our own. Soil wise we are actually closest to Te Mata Estate which is as the crow flies about a couple of kilometres that way. But their site is much, much hotter. On almost identical soils, but they have the protection of Te Mata Peak and they\u2019re a bit more inland. We\u2019ve got elevation and sea breezes, so I think on average we\u2019re 4 degrees cooler by day than inland, and 4 degrees warmer by night \u2013 so natural frost protection. Hard clay pan and we know that the pan varies from 2-3 metres in the North eastern corner, and ten metres in other parts. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-5094185 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"5094185\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-ddac01d\" data-id=\"ddac01d\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-c67e865 elementor-widget elementor-widget-text-editor\" data-id=\"c67e865\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>We see the grapes that come off that north-eastern corner are much smaller and intense in flavour. These go into our Green Glow and Minus 220 skin-fermented Sauvignons. De-stemmed without crushing, and cool ferment. Anything from seven days to three weeks on skins depending on the phenolic taste followed by six months on lees in stainless steel, full malo and bottled unfined and unfiltered.<\/p><p><strong>WF<\/strong>: I love this 2018 wine\u2013 it\u2019s quite fun. It\u2019s got a definite bready quality \u2013 a champagne-like nuance, with a bit of oat biscuit and brioche. The fruit\u2019s quite lively though \u2013 still definitely Sauvignon Blanc but that riper end like pineapple and melon, not herbaceous. Lower acid but still crisp and with a slightly spicy finish.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-76cc589\" data-id=\"76cc589\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-1a50bef elementor-widget elementor-widget-text-editor\" data-id=\"1a50bef\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>GC<\/strong>: Also at the top of the vineyard is our Pinot Gris, and we make <strong>Spook Light<\/strong> from that. Again, small, intense, high-quality berries. De-stemmed and using a pied de cuv\u00e9 ferment for up to three weeks.<\/p><p><strong>WF<\/strong>: This is going lovely with the cheese, a real match. I bet it\u2019s a great wine for a trendy wine bar and some tapas \u2013 we\u2019re going out to one later aren\u2019t we? Weird that it has almost lighter-red wine character to it- even the colour is kind of rosy \u2013 and the flavours are more cherry, pomengranate and lingonberries. Great concentration and length. Delicious!<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-fb8e0ad elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"fb8e0ad\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-7503221\" data-id=\"7503221\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-3a7c275 elementor-widget elementor-widget-text-editor\" data-id=\"3a7c275\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>GC<\/strong>: well if you like that, you\u2019ll love this one. It\u2019s a very small quantity, re-imagining of Green Glow, into a remix version called <strong>Minus 220<\/strong>. It has absolutely nothing in it but grape juice \u2013 no sulphur at all. We first made it for <em>Budburst<\/em>, a natural food and wine fair, in 2016 as our \u2018gold standard\u2019 natural wine and it developed a real following. It\u2019s effectively hand-made \u2013 hand-picked, hand-stirred and bottled by hand \u2013 even the labelling, corking and wax seal was done by hand in the first year.<\/p><p><strong>WF<\/strong>: Even the seal seems to smell of something \u2013 is that wine \u2013flavoured?<\/p><p><strong>GC<\/strong>: No, the seal is made from a local honey beeswax. We get some unparafinned beeswax from our local honey factory, Arataki, heat it up in a crock pot and hand dip every bottle. we\u2019re up to 2,400 bottles annual production now with plans for more, so it\u2019s pretty labour intensive.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-afd50ef elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"afd50ef\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-c36d728\" data-id=\"c36d728\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-ffda477 elementor-widget elementor-widget-text-editor\" data-id=\"ffda477\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong>WF<\/strong>: Ok, that\u2019s seriously cool. And the wine\u2019s amazing! Love the colour \u2013 really vibrant and so rich on the nose. A bit of nougat, pineapple &#8211; again, and that warm Mediterranean spice character \u2013 sumac and saffron. Sweet and sour flavours \u2013 like crystallised ginger and roasted, caramellised carrot. It\u2019s quite decadent \u2013 I could see myself having this with a big seafood platter of crayfish and scallops.<\/p><p><strong>GC<\/strong>: What do you think of the packaging and labels?<\/p><p><strong>WF<\/strong>: Certainly different. I remember talking to Terra Sancta about their labels, which at the time seemed a really brave move, with the intricate die-cuts and \u2018old master\u2019 painting-like quality to them. But at least it\u2019s not just another white square. Yours are very interesting. The skin-fermented wines are shown as developments from the Supernatural theme \u2013 deep sea creatures that glow green at the bottom of the ocean for Green Glow and , and bats and moths for SPook Light representing an unexplained orange light phenomenon in the Ozarks..<\/p><p><strong>WF<\/strong>: No spiders?! Or Fruit flies? No, they\u2019re cool, and like you say, they reflect the wine. Packaging that says what\u2019s inside.
