The fruit is from a chardonnay clone from Dijon (B95). In terms of wine making, the fruit was hand-harvested at 22.8 Brix then whole bunch pressed into tank and was inoculated. It was then transferred to one 2-year old Tonnellerie Ermitage (300 litre) and one 2-year old Tonnellerie Ermitage (228 litre) barrels for 11 months, to complete its primary fermentation at a very cool temperature. The wine saw no new oak and didn\u2019t go through malolactic fermentation. Further matured in bottle under diam cork for an additional 19 months prior to release. Medium gold hues in the glass. Lightly perfumed with floral notes of lilies and a hint of melon. Medium weight in the palate where the fruit is the hero. It has a purity and precision that walks the line between tension and elegance, and then concentration, beautifully. Flavours of white peach with a touch of subtle background spice.
