Hand harvested and then destemmed. The wine spent 88 days on skins, then was basket-pressed into barrel &#8211; undergoing full malolactic fermentation. The result is a pale amber colour in the glass. The perfume has some riesling notes of citrus, green apple and lemon blossom, but there\u2019s also ginger, honey, dried pineapple, jalapeno and fresh straw. Very dry, with a tightness and a tart acidic attack at \u00a0first on the palate. Salty, direct and with a nice phenolic grip of tannin and pepperiness. A richness develops that doesn\u2019t overwhelm the other parts &#8211; in fact it\u2019s a gentle expression, albeit with plenty of character, \u00a0that you can really settle into.
