At their best, like a good Chablis, they focus on a toothsome minerality and purity, without much influence from oak. A pale lemon-green colour in the glass. Perfumed with grapefruit, mandarin, white peach and just a hint of green herbs. Dry, precise and tight in the palate. Acidity is fresh and clean – mouthwatering and crisp. Some savoury notes, but also a little honeycomb to balance. Texture is quite plush, filling the palate and adding a roundness to that al dente juiciness at the start.
